Peanut Butter Balls in Heaven

There is such a serious lack of desserts on this carb diet! This is not ok with me! Which is why I've taken it upon myself to create a damn low-carb dessert. All hail Peanut Butter Balls.



These babies are the easiest things to make, and they really satisfy the sweet tooth. Plus they are 1.66 carbs per cookie - if you're counting.

1 cup of peanut butter (I used chunky)
1 cup of splenda
1 egg
1 tsp vanilla extract

Combine everything, roll into balls, and bake at 350 for 10 minutes.

Easy as pie - which I will possibly be attempting on this diet.
